La Daube aux olives!


Today I have put my cooking hat on!!;)
Time to snuggle up and bring on some hearty Provincial recipes!!


Last night I made "La Daube"...


This recipe brings in lots of flavour and memories to me...

I still remember going to my little French village local Primary school and the "cantine" use to serve the Best Daube around!!!;)

I though I would share my version of it with you today...

500 g of beef diced


3 carrots


3french shallots (onion otherwise)


2/3 garlic cloves


about 250 ml of nice red wine


i tin of crushed tomatoes


some thyme, rosemary, oregano and bay leaves


about 10 black olives


1 stock cube


Salt and pepper

*The night before, marinate the meat in wine and herbs (place in fridge)


*On the day, fry shallots, garlic and meat...then add diced vegies, olives, stock,marinade with herbs, crushed tomatoes, salt and pepper to taste.


And then let it cook very slowly for at least 3 to 4 hours (you can even pop it in oven...)
I use to serve it with some pasta (macaroni) and crusty baguette;)

I made a fab french recipe last night too.
Coq au vin. It is another dish that has lots of wine and likes to be marinated and slow cooked. I will try your Le daube next week.

Sounds yum Sandrine. I'm happy to give it a go but.... wouldn't it just be easier if you popped over and cooked it up for me!!!! OK, I'll do it. I'll let you know how I go.
