| Gluten free Cupcakes coconuts and white chocolate yumm! |
On Monday we had a special day with some friends, where sharing and discovering was on the agenda!
A little while ago, thanks to the blogging world, I met Catherine from A time to create...
Since then we discovered that we had quite a few in common and were lucky enough to meet in "real life"...
Time to try some new kitchen gadgets and bake some cupcakes...

I can assure you that Molly the little baby cow won every one's heart!
These little one got some attention too :)
But time to share that recipe with you...
This was the first time I used the Whitewings gluten free self raising flour.
I adapted and simplified (for what I have available here) the recipe from this one.
Could easily be a dairy free recipe if you pass the cream cheese addition to topping.
The result was good and the cupcakes disappeared in no time :)
Cup cakes Ingredients:
* Preheat oven 180ºC (fan forced)
2 cups of GF self raising flour (from White wings (by Donna Hay) available in supermarkets)
1 tsp of baking soda
1/2 cup of raw sugar
1 egg
2 tbsp rice oil
1 cup of coconut milk
Mix sugar, egg with electric mixer until "whitish" paste.
Add oil, egg and coconut milk and keep beating.
Add Flour, baking soda and beat until fluffy & smooth texture.
Fill your cupcake tin (only half full)
Bake in oven for 20 min
Cool on wire rack.
Topping/Icing
5 tbsp margarine or butter (I use Nuttelex)
2 tbsp of cream cheese (optional)
1/2 cup of GF icing Sugar
1/2 cup of white chocolate (GF)
Shredded coconuts
leave margarine and cream cheese at room temperature to become soft
Melt au bain marie your white chocolate with one tbsp of margarine, let it cool.
Mix all cool ingredients and beat until light and fluffy.
Now Pipe your fluffy icing over the cakes and sprinkle with coconuts.
Enjoy!
I will be trying different cupcakes recipe over the coming month trialling different ingredients to see what works best, so if you are interested stay tuned!
